A friend of mine told me: “I find so hard a low carb vegetarian recipe!” So I started thinking what would I do as a low carb vegetarian meal. I put some ingredients in the Yazio App and after confirming that it would be a low carb recipe, I bought all the ingredients and prepared the meal. It is delicious, low in calories and low in carbs, contains a lot of protein and it is also vegetarian. What can you wish more?
Preheat the oven - 180 degree, top/buttom
Wash and cut the broccoli - Put it in a tin
Clean and finely cut the onion.
In a pan, put the butter or oil and let it melt. Add the onion on medium heat and let it fry stirring every now and then until the onion become translucent.
Prepare the eggs.
In a bowl, beat the eggs with a fork.
Add the Skyr
Add the salt, vegetable bouillon and fried onion.
Mix well and put all over the broccoli inside the tin.
Cut the Parsley.
Spread it all over the broccoli. I also added some spring onion. it is optional though
Spread the Feta cheese all over
Bake for 1 hour
