Every time I feed the sourdough, I want to make something with the discard and not waste it. Usually this is on a Thursday and it fits also the time when we are out of bread. I use the sourdough discard for these delicious buns and we love them! A reason more to make the sourdough yourself 😉

Instructions

  1. In a small bowl, mix the honey with the fresh yeast and stir with a teaspoon until well mixed and becomes liquid

  2. In a big bowl, add the sourdough and the water and mix with a fork in order to spread the dough in the water

  3. Add the milk

  4. Then add the flour and knead.

  5. Add the butter and the lemon juice and knead.

  6. When everything is well incorporated, let the dough rest for 1 hour. Cover the dough in order to avoid drying.

  7. After one hour spread the salt and stretch and fold the dough in the same bowl.

  8. Put the dough it in the fridge for 8-10 hours.

  9. Divide in 10 pieces, as you like, and shape the rolls.

  10. Let the rolls rest for 45-60 minutes.

  11. Heat the oven: 230 degrees top-bottom heat.

  12. Brush the buns with some low warm water and sprinkle with poppy and/or sesame seeds, then cut a slit in the roll

  13. Bake : place the buns in the oven for 20-25 minutes.
