A delicious recipe for all lovers of coconut flavours! I am a coconut lover and there is no Christmas without them. I tried to improve the recipe and chopped the coconut very finely. This way I got a great flavour and the cookies are smooth and delicious.
Egg whites foam
Whisk the egg whites together with the salt and sugar until stiff foam. (about 5 minutes with the mixer should be enough)
Mix the rest of the ingredients
Mix well, separately, the rest of the ingredients, then add them over the foam. Mix until the mixture is integrated into the egg white foam.
Form the portions
Using two spoons, scoop out the cream and portion onto a baking sheet.
Bake after 1 hour
Leave for 1 hour to dry a bit, then bake at 150 degrees, fan, 15 minutes.
Add the chocolate
Leave them to cool a bit, then sprinkle with melted chocolate as desired.
