I made this recipe after I tried these cookies at work from a colleague. I find them delicious and plan to do them again! You can replace the hazelnuts with almonds if you like almonds better.
For the dough, mix well all the ingredients (flour, grounded hazelnuts, sugar, butter, vanilla sugar, pinch of salt, 1 egg ) and let rest in the refrigerator for 30 minutes.
Whip the egg whites, add the powdered sugar and finally slowly stir in the 120 g of hazelnuts with a spatula.
Mix the walnuts with the hazelnuts and the chocolate and cut a few times with a knife to make smaller pieces.
Roll out the dough 3 mm thin and cut out the shape with a glass (6-7 cm diameter) as in the picture.
Spread the hazelnut foam on each piece and then sprinkle some nut-chocolate mixture on top.
Fold the dough, but do not press on it too much.
Bake in a preheated oven at 180 degrees for 12-14 minutes.
