It is fluffy and juicy, it is low in sugar, high in fiber and is super tasty with lots of plums
Core the plums, cut into smaller pieces and set aside.
Preheat the oven to 180°C convection oven.
Prepare a round baking tin with baking paper.
Mix the butter, eggs, sugar, salt and vanilla sugar until a cream is formed.
Add the lemon zest.
Add the ground almonds and continue to mix.
Add the oat flour and continue to mix for 1 minute.
Pour the resulting cream into the baking tin and spread the plums on top.
Optional: You can sprinkle coarsely chopped almonds or almond flakes on top.
Bake for 70 Minutes.
When ready, let it cool down for 1 h before serving.
