I love the pretzel dough! It is crunchy outside and soft inside! If you add some butter or chocolate spread, it is simply divine!
In a small bowl, mix the honey with the fresh yeast and stir with a teaspoon until well mixed and becomes liquid
In a big bowl, add the sourdough and the water and mix with a fork in order to spread the dough in the water
Add the milk
Then add the flour and knead.
Add the butter and the lemon juice and knead.
When everything is well incorporated, let the dough rest for 1 hour. Cover the dough in order to avoid drying.
After one hour spread the salt and stretch and fold the dough in the same bowl.
Cover and put the dough it in the fridge for 8-10 hours.
Divide in 10 pieces and shape the rolls.
Let the rolls rest for 45-60 minutes.
In a pot, add the tap water and boil. When boiling, turn the heat down to medium heat and add the bicarbonate of soda.
Add every bun and let it boil for 20 seconds on each side. Take it out, and put them on the baking pan.
Heat the oven: 230 degrees top-bottom heat.
Brush the buns with some low warm water and sprinkle with poppy and/or sesame seeds, then cut a slit in the roll
Bake : place the buns in the oven for 20-25 minutes.
