Gluten free, vegan and very delicious! This bread is fluffy and soft and simply delicious! Try it and convince yourself :)
In a bowl, put the rice and add water to cover it. Let it soak for at least 2 hours or over night.
Drain the rice well and pour it to a high-powered blender along with all ingredients. Mix until very fine for about 1-2 minutes.
Pour the batter into a greased loaf pan or use parchment paper. Choose a pan that the batter fills just half-way up when you pour it in.
Cover and let rest at room temperature until 1½ times the original size.
Preheat the oven to 190 C, top bottom heat.
As soon as the batter rises to nearly 2 times the original size you may bake.
Put a bowl with water inside the oven and bake for 35-40 mins.
When baked, take the bread out of the loaf pan and let it cool down.
It’s best fresh, but can last a few days in the fridge.
