Rice Pudding with peach compote

This is a delicious meal for dinner or for lunch. Every time I prepare this meal, I feel like a kid again.

  1. Preheat the oven at 180 degrees ventilation (circulating air)

  2. Boil the rice with the milk on medium heat until cooked. Stir now and then to avoid burning the rice on the bottom of the pot.

  3. Separate the egg whites from egg yolks

  4. Mix the egg yolks with half of the sugar, a pinch of salt, the lemon zest and butter and stir it until creamy.

  5. Egg white foam: we mix the egg whites with the rest of the sugar until we obtain a strong foam.

  6. Let the rice cool down for 10 minutes when ready.

  7. Mix the boiled rice with the egg yolks cream.

  8. Mix all together
    Slowly, add the rice-egg-yolks-cream on the foam and mix with large movements to mix it well but still maintaining the air in the mixture. When done, put in a oven form.

  9. Bake in the preheated oven for 45 minutes.

    You can serve it with fresh fruits, fruit mousse or compote, or you can eat it as it is.
