Simply great! airy and lightweight with a crunchy crust.
Mix the sourdough with the water.
Separately, mix the yeast with honey and lemon juice and add it to the sourdough-water bowl.
Add the flour and mix until all the flour is incorporated.
Cover and let rise for 1 hour.
Add the salt and stretch and fold the dough for the first time.
Cover and let rise for another hour.
Stretch and fold again and refrigerate the dough for 8-12 hours.
Remove the dough from the refrigerator and divide the dough in 4 equal pieces.
Do a lamination of each piece and roll it to give it the form of the baguette.
Let it rise for about 2 hours and then bake for 30 minutes, top bottom heat, 230 Celsius degrees.

I first divided the dough into only 3 pieces and that's why you only see 3 baguettes in the pictures, but I actually made 4. One was so big I had to cut it in half and another was also too long but fit on another tray. So, listen to me and do it right from the start
