Kefir contains millions of probiotics, which are bacteria with potential health benefits. It's also low in lactose and packed with vitamins and minerals that are good for our body. This is why I decided to put it in my bread and it was a good decision. The rolls are very delicious! Give it a try and convince yourself!
Mix the sourdough with the water, add the kefir and continue mixing.
In a small bowl, mix the fresh yeast with honey and lemon juice and add to the kefir dough mixture.
Continue mixing and add the flour.
Mix until all the flour is incorporated. Cover and let rise for 1 hour.
Add the salt and stretch and fold the dough for the first time. Cover and let rise.
After another hour, stretch and fold again and refrigerate the dough for 8-12 hours (as you like).
Remove the dough from the refrigerator, shape the rolls, cover and let rise for 2-3 hours at room temperature.
Preheat the oven to 220 degrees top/bottom heat.
Optional: brush the rolls with an egg yolk-milk mixture, sprinkle with sesame seeds or/and poppy seeds.
Make some cuts on the rolls and bake them for 20 minutes.
